I need recipes that use pumpkin butter (or apple butter - I’ll substitute). Baked goods. Things like cookies, cakes, muffins….
Back in early November, right after Halloween, we chopped up Jack and I made a whole bunch of pumpkin butter. It tastes good, but being made from fresh pumpkin, the texture is… well, [...]

I finally got around to “processing” the rest of Jack.  I ended up with 15 cups of pumpkin puree in the freezer.  I also ended up with pumpkin soup for dinner, and it came out pretty tasty - especially considering the pumpkin in question was a carving pumpkin, not a cooking variety.

Casey’s Killer Apple Cake
3 cups flour
2 cups sugar
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 cup oil
1 cup water
